Cinnamon rolls have always been one of my all-time FAVOURITE treats! The smell of Cinnabon at the malls never fails to lure me in! I always wanted to make my own homemade cinnamon rolls, but the 3 hour process it takes to make them seemed so daunting to me. I knew I absolutely had to come up with an easier and healthier version of cinnamon rolls that I could whip up at home. This recipe exceeded all my expectations! No one would believe these cinnamon rolls are made with the easiest 2 ingredient dough! These rolls are soft, fluffy, and packed with that cozy cinnamon sugar filling. Not to mention they make the house smell like a giant delicious ooey gooey cinnamon roll! If you're like me and LOVE cinnamon rolls but never wanted to go through the 3 hour process to make them, this is a must try!!
TIPS TO MAKE THIS RECIPE PERFECTLY
Use full fat or non-fat GREEK YOGURT - I've found that these two work the best! Non-dairy yogurt works for this recipe as well, but I do not recommend "greek-style" yogurt as the texture will not turn out the same.
Use a sharp knife to cut the rolls into pieces - this helps ensure that the cuts slice all the way through and that the dough holds nicely together as you cut them.
Chill the frosting - I recommend chilling the frosting in the fridge for at least 1 hour. This allows it to set nicely and create that thick and creamy frosting texture that's perfect for cinnamon rolls!

2 Ingredient Cinnamon Rolls
Ingredients
Dough
- 1 c self-rising flour
- 1 c greek yogurt
Filling
- ⅓ c coconut sugar
- ¼ c melted butter
- 1 tablespoon cinnamon
Frosting
- 1 c cashews (soaked in hot water for 1 hr)
- 3 tablespoon maple syrup
- 1 tablespoon melted coconut oil
- 1 tsp vanilla extract
- 2 teaspoon fresh lemon juice
- ⅓ c almond milk
- pinch salt
Instructions
- Preheat the oven to 350F and grease an 8x8 baking dish
- For the dough, add self rising flour and greek yogurt to a bowl, and mix with a wooden spoon until fully combined. Form into a ball of dough
- Flour a flat surface and a rolling pin, and roll the dough into a large rectangle (about ½ inch thick)
- Brush your melted butter over the dough and sprinkle the cinnamon sugar mixture evenly over top
- Starting from one end of the dough, slowly roll the dough tightly up the long side until you reach the other end. Using a sharp knife, cut into 8 even pieces.
- Place each roll, seam side up, into your greased baking dish. Brush the tops of each roll with left over melted butter. Bake for about 30 minutes until lightly golden brown.
- While the rolls are baking, prepare the frosting! Drain your soaked cashews and all all frosting ingredients to a blender or food processor. Blend on high speed for about 2 minutes until creamy and smooth, scraping down the sides with a spoon occasionally. Chill the frosting in the fridge for 1 hour to thicken.
- Allow the cinnamon rolls to cool for 10 minutes before frosting and serving!
