    These protein bars are so fun to make and take just 5 minutes to whip up! Made with good for you ingredients like chickpeas, vanilla protein, and cashew butter, they're the perfect energy boost to get you through the day!

    These secretly healthy birthday cake protein bars are made with good for you ingredients like chickpeas, cashew butter, and pure maple syrup! They literally taste like raw cookie dough, no one would believe that the main ingredient is CHICKPEAS. The best part about these bars is that they take only 5 minutes to whip up, and the only equipment required is a baking tray and a food processor! I love making a double batch of these and storing some in the freezer for whenever I need a quick energy boost or healthy snack. Hope you love these as much as I do!

    Birthday Cake Protein Bars

    These protein bars are so fun to make and take just 5 minutes to whip up! Made with good for you ingredients like chickpeas, vanilla protein, and cashew butter, they're the perfect energy boost to get you through the day!

    Ingredients
      

    • 1 ½ c canned chickpeas (drained, rinsed and patted dry)
    • ¼ c vanilla protein*
    • 2 tablespoon coconut flour
    • ½ c cashew butter
    • 2 tablespoon maple syrup
    • ½ teaspoon almond extract
    • Splash almond milk
    • Sprinkles

    Instructions
     

    • Add all the ingredients except sprinkles to a high speed food processor. Blend together until smooth, scraping down sides as needed.
    • Fold in sprinkles by hand.
    • Press mixture firmly into a lined loaf pan. Top with additional sprinkles and then place the pan in the freezer to set.
    • Slice into bars and enjoy!

    Notes

    *You can substitute the cashew butter with any creamy nut butter
    *Store in an airtight container in the freezer for best texture and let thaw 10 minutes before eating.
