Welcome to Wakeupandkale! I’m Arisha, a 23 year old athlete from Vancouver, Canada. I started Wakeupandkale in March, 2020 to promote living a healthy, yet balanced lifestyle. My goal is to show you how truly easy, fun and delicious healthy eating can be! I’ll be sharing recipes on everything from comforting home-cooked meals, to wholesome baked goods — all made from real foods and ingredients you can feel good about. Paleo strawberry cookie bars! 🍓 aka the perfect spring treat! 🎉 these are soft baked, melt in your mouth moist and loaded with juicy fresh strawberries! 🤤 Plus they just so happen to be gluten free, vegan and grain free! 🙌🏼 Happy Tuesday! 💕

Ingredients:
1 3/4c almond flour
1/3c almond butter
1/4c melted coconut oil
1 flax egg (or regular egg if not vegan)
1/3c coconut sugar
1tsp almond extract
1tsp baking powder
1/4tsp salt
1/3c chopped strawberries
1/3c chocolate chips

Method:
1)preheat oven to 350F and line an 8x8 baking pan with parchment paper
2)for flax egg, combine 1tbsp ground flaxseed with 2.5tbsp water. Set aside 5mins to “gel”
3)in a large bowl, combine egg, almond butter, oil, almond extract & coconut sugar
4)stir in almond flour, baking powder & salt
5)fold in strawberries & chocolate chips
6)transfer batter to baking pan and top with extra strawberries + chocolate chips
7)bake 20-25mins. Let cool completely, then slice into squares. Store in the fridge for best texture! (They will set/firm up once refrigerated overnight)

Crispy smashed potatoes 🥔 if there’s only one type of potato you need in your life, it’s these! Think crispy on the outside, fluffy in the centers and topped with extra flakey sea salt 😍 plus paired with the most addicting green herb sauce they’re a dream come true! Recipe is below ⬇️

Ingredients:
1.5lbs baby potatoes
1tbsp olive oil
1tsp sea salt
1tsp garlic powder
Pepper (to taste)

Sauce:
1c parsley
2tbsp lemon juice
1/4c avocado oil
1tsp minced garlic
1tsp dried oregano
1/4tsp chili flakes
Salt/pepper

Method:
1)preheat oven to 400F and line a baking sheet with parchment paper.
2)boil potatoes until fork tender
3)layer potatoes on prepared baking sheet and toss with olive oil + seasonings
4)smash potatoes with a small glass or jar. Lightly spray tops with cooking spray
5)bake ~25mins until edges are crispy
6)for sauce: blend together all ingredients until smooth
7)serve smashed potatoes with sauce and enjoy!

The best vegan banana bread!🍌 stop throwing out your overripe bananas and make this instead 🤌🏼 it’s ultra moist, fluffy + loaded with gooey chocolate chips 😮‍💨 not to mention it’s completely vegan and made with healthier ingredients! Happy Tuesday! 💕

Ingredients:
1 3/4c white wheat flour (sub ap, oat or wheat)
1tsp baking soda
1/2tsp baking powder
1tsp cinnamon
1/3c coconut sugar
1 1/2c overripe mashed banana
1/4c almond milk
1tsp vanilla
3/4c chocolate chips

Method:
1)preheat oven to 350F and line a loaf pan with parchment paper
2)mash bananas in a large bowl. Then stir in all wet ingredients
3)add in dry ingredients and stir till combined
4)fold in chocolate chips
5)transfer batter to lined loaf pan and top with extra chocolate chips
6)bake 45-55mins or until toothpick comes out clean
7)let cool in pan 15mins, then transfer to a wire rack to cool completely. Slice and enjoy!

Loaded greek salad jars 🥗 Ever since I started making salad jars my meal prep game has been another level! 🤌🏼 they’re super easy, loaded with fresh ingredients and are just so fun! Try out this version and let me know what you think! 💕

Ingredients
Dressing:
1tbsp olive oil
1.5tbsp lemon juice
1/2tsp oregano
1/4tsp salt
Salad:
1/2c chickpeas
1/2c cucumbers
1/3c red peppers
1/4c red onions
1/3c tomatoes
1/3c lettuce
Salt/pepper (to taste)

Method:
1)Add all ingredients to salad jars in order listed
2)Cover with lids and store in the fridge
3)When ready to eat, flip salad jars and enjoy!
