They're also made with just a handful of simple, good for you ingredients and are even healthy enough to even eat for breakfast!

Pumpkin Chocolate Chip Cookies
These pumpkin chocolate chip cookies are soft baked, warmly spiced, and are loaded with ooey gooey chocolate chips! Vegan, gluten-free, grain free and healthy enough to eat for breakfast!
Ingredients
- 1 ¾ c almond flour
- 2 teaspoon pumpkin pie spice
- 1 teaspoon baking soda
- ⅓ c pumpkin puree
- ⅓ c almond butter
- 1 flax egg (or 1 egg if not vegan)
- ⅓ c maple syrup
- 1 teaspoon vanilla extract
- ⅓ c chocolate chips
Instructions
- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a large bowl, mix together wet ingredients.
- Add in the flour, pumpkin spice, and baking soda.
- Fold in chocolate chips.
- Refrigerate for 30 minutes.
- Use a cookie scoop to place dough onto your prepared baking sheet and press down just slightly into a cookie shape.
- Bake for 10-12 minutes. Let cool on pan for 10 minutes before devouring!
