Vegan Cosmic Brownies Recipe (No-Bake, Gluten Free)

These vegan cosmic brownies are rich, fudgy and topped with a creamy chocolate ganache. They're the perfect make-ahead treats to have on hand for whenever that sweet craving hits.

Ingredients
  

  • 1 c medjool dates
  • ¾ c almond flour
  • ½ c cacao powder
  • ½ c walnuts
  • 3 tablespoon milk
  • 1 teaspoon vanilla extract
  • rainbow chips

Ganache

  • c choc chips
  • 1 c coconut cream

Instructions
 

  • Brownie: Combine all ingredients in a food processor until a brownie-like consistency is achieved. Press the mixture into your prepared pan in an even layer.
  • Chocolate ganache: add coconut cream to a microwave safe bowl and microwave 45sec. Pour over chocolate chips and let sit 5 minutes. Then whisk ingredients until fully combined. If chocolate isn't completely melted, microwave another 20 seconds. Pour ganache over the brownie layer. Scatter rainbow chips on top.
  • Place the brownie tray in the freezer to firm up. Once set, slice into squares and enjoy!
  • Store in the freezer and thaw for 10 minutes before serving.
