Homemade Rx Bars (Chocolate Sea Salt)

These homemade copycat rx bars come together with just 6 simple ingredients and are easily customizable to any flavour combo you'd like! Perfect for a healthy and delicious snack throughout the week that is both vegan and gluten-free!

  • Add almonds to a high speed food processor and pulse into tiny pieces. Add all other ingredients and blend until smooth. Add water by the tablespoon as needed until a doughy texture is formed
  • Transfer batter to a lined loaf pan and press firmly into an even layer
  • Place in fridge for 1 hour to set and slice into bars!

How to Store

Store in an airtight container in the fridge for up to 1 week.
To freeze, wrap each bar individually and store in a freezer-safe container for up to 3 months. Thaw at room temperature before eating.
 

Top Tips 

  1. Use soft medjool dates. Dry or small dates will not blend down properly and the bars will crumble instead of holding together. If your dates feel firm, soak in hot water for 10 minutes and drain well before blending.
  2. Chill before slicing. Refrigerate or freeze until fully set before cutting. This is what keeps the bars holding their shape cleanly.
  3. Add water one tablespoon at a time. Pulse between each addition until the mixture just comes together. Too much water at once makes the bars sticky and hard to press.
