Strawberry Matcha Yogurt Clusters (High-Protein)

These strawberry matcha yogurt clusters are a high-protein, no-bake snack made with Greek yogurt, fresh strawberries, and a matcha white chocolate coating.

Ingredients
  

  • 1 c greek yogurt
  • 2 c strawberries chopped
  • 2 tablespoon honey or maple syrup
  • 1 teaspoon matcha powder
  • 1 c white chocolate chips
  • 2 teaspoon coconut oil

Instructions
 

  • Combine yogurt, strawberries and honey in a medium bowl
  • Drop by the spoonful onto a parchment lined sheet. Freeze 2 hours to set.
  • Melt together white chocolate with coconut oil in the microwave at 20 sec increments, stirring as needed. Then sift in matcha powder and combine until smooth.
  • Dip clusters in white chocolate matcha. Freeze at least 30min until set, and enjoy!
  • Store leftovers in an airtight container in the freezer for up to 3 months.
