  • Preheat oven to 350F and line a loaf pan with two flaps of parchment paper.
  • For flax eggs, combine 2tbsp ground flax with 5 tablespoon water. Let sit 5 mins to "gel."
  • In one bowl, mash bananas and then stir in all wet ingredients, including flax eggs.
  • In another bowl, combine all dry ingredients except chocolate chips.
  • Add dry ingredients to wet and stir until just combined.
  • Fold in chocolate chips.
  • Transfer batter to your prepared loaf pan and top with additional chocolate chips. Bake for 50-60 minutes or until toothpick comes out clean.
  • Let cool in pan for 15 minutes and then transfer to a wire rack to cool completely!
