Apple Cinnamon Oatmeal Bars

These apple cinnamon oatmeal bars take just minutes to prep and are loaded with cozy fall flavours. Perfect for on the go breakfast or an easy dessert that's both healthy and delicious!

Ingredients
  

  • 1 c applesauce
  • 1/3 c almond butter
  • 1 flax egg
  • 2 tbsp almond milk
  • 1 tsp vanilla extract
  • 1/4 c maple syrup
  • 1 c rolled oats
  • 1 1/4 c oat flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 c chopped apples

Instructions
 

  • Preheat oven to 350F and grease or line an 8x8 baking pan with parchment paper.
  • For flax egg, combine 1tbsp ground flaxseed with 2.5tbsp water. Set aside 5 mins to “gel.”
  • In a medium bowl, combine oat flour, oats, cinnamon and baking powder.
  • In a separate bowl, combine all wet ingredients, including flax egg.
  • Add dry ingredients to wet and stir till combined.
  • Fold in 2/3c of chopped apples.
  • Pour into prepared baking pan and top with remaining 1/3c apples.
  • Bake 25mins until lightly golden. Let cool in pan for 10mins and then transfer to a cooling rack to cool completely. Slice into bars and enjoy!
