The cold fall and winter seasons always have me craving all the warm and cozy flavours. As much as I love all the pumpkin recipes this time of year, there's something about apple cinnamon that truly hits the spot like no other! These apple cinnamon oatmeal bars are warmly spiced, packed juicy cinnamon apples, and have a delicious soft and chewy texture. Not to mention they will make your kitchen smell like an absolute dream! Trust me, you guys are going to love these baked oatmeal bars!
Ingredients in these Apple Cinnamon Oatmeal Bars:
Rolled Oats - be sure to use rolled oats for this recipe. Quick oats or instant oats will not yield the same results and will cause the texture/baking time to vary.
Oat Flour - if you don't have oat flour on hand, you can make your own simply by finely grinding oats in a food processor
Applesauce - I used organic, unsweetened applesauce for this recipe to keep it refined sugar free
Almond Butter - creamy almond butter works best for this recipe. You can substitute with creamy peanut butter or cashew butter.
Flax Egg - you can substitute a regular egg if not vegan
Almond milk - feel free to substitute your favourite nut milk
Vanilla Extract, Cinnamon - add those delicious cozy flavours
Baking Powder
Apples - finely chopped. I used honeycrisp, but any apples will work!

Apple Cinnamon Oatmeal Bars
Ingredients
- 1 c applesauce
- β c almond butter
- 1 flax egg
- 2 tablespoon almond milk
- 1 teaspoon vanilla extract
- ΒΌ c maple syrup
- 1 c rolled oats
- 1 ΒΌ c oat flour
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 c chopped apples
Instructions
- Preheat oven to 350F and grease or line an 8x8 baking pan with parchment paper.
- For flax egg, combine 1tbsp ground flaxseed with 2.5tbsp water. Set aside 5 mins to βgel.β
- In a medium bowl, combine oat flour, oats, cinnamon and baking powder.
- In a separate bowl, combine all wet ingredients, including flax egg.
- Add dry ingredients to wet and stir till combined.
- Fold in β c of chopped apples.
- Pour into prepared baking pan and top with remaining β c apples.
- Bake 25mins until lightly golden. Let cool in pan for 10mins and then transfer to a cooling rack to cool completely. Slice into bars and enjoy!
