    These paleo pumpkin muffins are fluffy, melt in your mouth moist, and are loaded with cozy pumpkin spice flavours. They're sure to be every pumpkin lover's new favourite muffin recipe!

    I'm a huge pumpkin lover so when fall season comes around, I LOVE trying out new cozy fall recipes! I've made so many pumpkin loaves and muffins over the years, but these paleo pumpkin muffins are truly a personal favourite! They're ultra moist, yet SO fluffy at the same time! Not to mention they're loaded with all the coziest pumpkin spice flavours and topped with ooey gooey chocolate chips. No one will believe that these pumpkin muffins are a healthier version and completely grain free!

    Paleo Pumpkin Muffins

    These paleo pumpkin muffins are fluffy, melt in your mouth moist, and are loaded with cozy pumpkin spice flavours. They're sure to be every pumpkin lover's new favourite muffin recipe!

    Course Breakfast, Dessert
    Servings 9 muffins

    Ingredients
      

    • 1 c almond flour
    • 2 tablespoon coconut flour
    • 2 teaspoon pumpkin pie spice
    • 1 teaspoon baking soda
    • ¼ teaspoon salt
    • ⅓ c almond butter
    • 2 eggs
    • ¾ c pumpkin puree
    • ¼ c maple syrup
    • 1 teaspoon vanilla
    • ½ c chocolate chips
    Shop Ingredients on Jupiter

    Instructions
     

    • Preheat oven to 350F and line a muffin tray with liners.
    • In a large bowl, whisk together wet ingredients.
    • Add in all dry ingredients except chocolate chips and stir till just combined (do not overmix!)
    • Fold in chocolate chips
    • Scoop into 9 muffins moulds and top with extra chocolate chips.
    • Bake for 20 mins. Let cool in pan 10mins and then transfer to a wire rack to cool completely!

      Love these tasty, nourishing muffins! I made them with chopped dates instead of chocolate since my husband isn’t a big chocolate fan. They were so darn good and oh so cozy!

      These look so moist and delicious! We are going to have to try these and I think we’ll use dark chocolate chips in them! Maple syrup is the perfect sweetener with the spices! Love these!

      I've made this recipe a few times and love it. I've also made them in a 9x9 baking dish (like a muffin cake) and it worked great and was super easy (although they then need to make for longer).
