    Get ready to fall in love with these gluten free pumpkin spice scones that taste just like they came from your favourite bakery! These scones are naturally vegan, gluten-free, and made with healthier ingredients. They're soft, tender, and the perfect companion to a cozy cup of coffee.

    Pumpkin Spice Scones with Glaze

    These delicious pumpkin scones are so easy to make! Made with wholesome ingredients that can be found in the grocery store, they scream the best fall recipe in the best way possible. This is sure to be an autumn favourite that the whole family will enjoy!

    Ingredients

    Pumpkin Spice Scones on cooling rack
    • oat flour
    • pumpkin puree
    • coconut sugar
    • nut milk
    • coconut oil
    • coconut yogurt (thick)
    • vanilla extract
    • pumpkin pie spice
    • baking powder

    White Chocolate Glaze:

    • vegan white chocolate chips
    • coconut oil
    • chopped pecans

    Instructions

    1. Preheat oven to 425F and line a baking sheet with parchment paper
    2. In a large bowl, combine all dry ingredients
    3. Cut in coconut oil with a pastry cutter (or fork if you don’t have one)
    4. Add in wet ingredients and stir until just combined (don’t overmix!)
    5. Form into a ball of dough and shape into a large round disk shape. Use a sharp knife to cut into 8 even triangle pieces and place each 2 inches apart on baking sheet.
    6. Bake for 16-18 minutes until lightly golden. Once baked, let cool on pan for 15 minutes before removing. (don’t skip this step!)
    7. For glaze, melt together white chocolate with coconut oil until smooth. Drizzle generously over top of cooled scones and top with chopped pecans while the glaze is still wet. Enjoy!

    Substitutions

    1. Oat flour – you can substitute with gluten-free flour. You can also make your own oat flour by grinding oats in a blender or high speed food processor!
    2. Coconut sugar – Replace with light brown sugar if desired
    3. Nut milk – Use almond milk or any other dairy-free milk you prefer. If not vegan, you can also substitute dairy milk.
    4. Coconut oil – swap with cold butter in a 1:1 ratio. Use dairy-free butter for a dairy free version.
    5. Coconut yogurt (thick) – substitute with Greek yogurt or any thick vegan yogurt. Do not substitute with non-fat yogurt as the dough will not hold together. 
    6. Pumpkin pie spice – Use a mix of cinnamon, nutmeg, and ginger if you don't have this on hand. The combination of these spices together will create a similar pumpkin spice flavor.
    White Chocolate Glaze:
    1. Vegan white chocolate chips – Swap with regular white chocolate chips or another dairy-free option.
    2. Coconut oil – Use heavy cream for a thicker glaze.
    3. Chopped pecans – Replace with walnuts or almonds for a different nutty crunch.
    Simple Maple Glaze:
    • For a simple maple glaze, mix powdered sugar with maple syrup and a splash of almond milk. Add only as much milk as needed to reach your desired glaze consistency.

    How To Store Pumpkin Spice Scones

    Store gluten free pumpkin spice scones in an airtight container or wrap individually in plastic wrap. They can be stored at room temperature for up to 2 days or in the fridge for up to 4 days. They can also be frozen for up to 3 months.

    3 Top Tips for Success

    1. Frozen coconut oil is key! Freeze about 1 hour ahead of time to create the frozen coconut oil for these healthy pumpkin scones.

    2. Place each scone on about 2 inches apart on your prepared baking sheet. The scones will expand while baking so it's important to leave enough room in between them.

    3. Let scones cool before adding your glaze. If the scones are still hot, the glaze will melt into the scones.

    Yes! Simply add 1-2 tablespoon of sugar to the recipe for a slightly sweeter version.
