Pumpkin Spice Scones

These pumpkin spice scones taste like your classic bakery scones, but are naturally vegan, gluten free, and made with healthier ingredients! They’re soft baked, loaded with pumpkin spice flavours and topped with a delicious white chocolate glaze. Sure to be a fall favourite that the whole family will enjoy!

For all my pumpkin lover’s, this one’s for you! These pumpkin spice scones are so soft and fluffy, you won’t even miss the butter or dairy in them! They’re made with wholesome ingredients like oats, coconut oil and pumpkin puree, and just scream fall in all the best ways. Trust me, you’ll have a hard time going back to bakery scones once you try this recipe!

Ingredients in these Vegan Pumpkin Spice Scones:

Oat Flour – ensures that these scones turn out moist and fluffy, not tough and dry! Oats also add a great fibre and nutrient boost to these healthy scones.

Pumpkin Puree – make sure you use canned pumpkin puree, NOT pumpkin pie filling.

Coconut Sugar – adds a slight sweetness to these scones without using any refined sugars!

Nut Milk – any nut milk will work for these scones! My favourites are oat milk and almond milk. You can also substitute regular milk if not dairy free.

Coconut Oil – this recipe requires your coconut oil to be chilled and in solid state. Soft or runny coconut oil will not be strong enough hold the scones together and keep their texture. You can also sub cold butter, cut into cubes.

Coconut Yogurt – you want to use THICK coconut yogurt for this recipe. Feel free to substitute regular, thick greek yogurt if not vegan.

Vanilla Extract

Pumpkin Pie Spice – give the scones the coziest pumpkin spice flavours. I prefer store bought pumpkin pie spice, but if you don’t have any on hand, you can make your own with 1tsp cinnamon, 1/4tsp nutmeg and 1/4tsp ginger.

Baking Powder – helps the scones rise and become fluffy

White Chocolate – I used white chocolate chips for the glaze. Be sure to use vegan white chocolate for vegan diets.

Raw Chopped Pecans – optional for topping, but highly recommended! They truly are the perfect addition to these pumpkin spice scones!

Pumpkin Spice Scones

Ingredients
  

  • 2 c oat flour
  • ½ c pumpkin puree
  • ¼ c coconut sugar
  • ¼ c nut milk
  • c solid, chilled coconut oil
  • 2 tbsp coconut yogurt (thick)
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • 1 tbsp baking powder

White Chocolate Glaze:

  • c vegan white chocolate chips
  • 1 tsp coconut oil
  • ¼ c chopped pecans

Instructions
 

  • Preheat oven to 425F and line a baking sheet with parchment paper
  • In a large bowl, combine all dry ingredients
  • Cut in coconut oil with a pastry cutter (or fork if you don’t have one)
  • Add in wet ingredients and stir until just combined (don’t overmix!)
  • Form into a ball of dough and shape into a large round disk shape. Use a sharp knife to cut into 8 even triangle pieces and place each 2 inches apart on baking sheet.
  • Bake for 16-18 minutes until lightly golden. Once baked, let cool on pan for 15 minutes before removing. (don’t skip this step!)
  • For glaze, melt together white chocolate with coconut oil until smooth. Drizzle generously over top of cooled scones and top with chopped pecans while the glaze is still wet. Enjoy!
