No Bake Salted Caramel Brownies
These no bake salted caramel brownies are made with just a handful of healthy ingredients and taste like a rich, fudgy brownie! The delicious brownie bottom is topped with a gooey salted caramel that is guaranteed to melt in your mouth! Naturally vegan, gluten free and refined sugar free.
These healthy brownies are completely no bake, and you’ll be shocked at just how healthy they are! The brownie layer is made from a date, cocoa and hazelnut base which creates the chewy and fudgy texture that we all crave in a brownie! They’re then layered with a delicious almond butter caramel that’s lightly sweetened with maple syrup. Not to mention it’s ooey gooey in all the best ways! Top these off with some flaky sea salt because how can you go wrong with salted caramel and chocolate combined?! If you’ve never tried a no bake dessert before, these brownies will blow your mind!
TIPS TO MAKE THE PERFECT NO BAKE SALTED CARAMEL BROWNIES
Use medjool dates, not regular dates – Medjool dates have a sweet caramel like flavour which is perfect for this recipe! They’re also softer and will blend together well with the rest of your ingredients.
Use soft, gooey medjool dates – If your dates are not soft, soak them in warm water for 5-10mins. Then drain, pat dry, and continue on with the recipe.
Line your loaf pan with flaps of parchment paper – this will ensure that your brownies are super easy to lift out and slice once they’re done!
Store in an airtight container in the fridge or freezer – I love the texture of these when stored in the freezer. They’re also the perfect snacks to have stored away for whenever that sweet tooth craving hits!

No Bake Salted Caramel Brownies
Ingredients
Brownies:
- 1 1/2 c pitted medjool dates
- 1 c walnuts
- 1/2 c hazelnuts
- 1/3 c cocoa powder
Salted Caramel:
- 1/2 c almond butter
- 1/4 c maple syrup
- 1 tbsp almond milk
- 1 tbsp coconut oil
- 1/4 tsp sea salt
Instructions
Brownie:
- Combine all ingredients in a food processor until it reaches a brownie consistency. Press down into lined loaf pan.
Salted Caramel:
- Stir together all ingredients until smooth and pour over top of brownie layer. Place in the freezer to firm (about 1hr.)
- Once set, sprinkle with flaky sea salt, slice into 10-12 squares and enjoy! Best stored in the freezer.
