    These copycat snickerdoodle RX bars taste like a warm cinnamon cookie wrapped in a protein bar. Soft, chewy, lightly spiced with cinnamon and allspice, and made from just five whole food ingredients. No baking, no complicated steps, and they cost a fraction of what you would spend buying RX Bars from the store.

    I have been a huge RX Bar fan for years but at five to six dollars per bar it adds up fast. Making them at home gives you the same chewy, date-based texture and the same clean ingredient list for a fraction of the price. The snickerdoodle flavour is my personal favourite of all the versions I have made. The cinnamon and allspice combination with the vanilla protein gives it that warm, cozy flavour that is genuinely hard to stop eating.

    If you love making your own protein bars at home, my copycat chocolate sea salt RX bars are the other flavour I always have going alongside these. And when I want something bite-sized instead of a full bar, my peanut butter cookie dough energy balls use the same food processor method in about the same amount of time.

    • A fraction of the cost. Store-bought RX Bars run five to six dollars each. This recipe makes eight bars for under three dollars total.
    • Just 5 ingredients. Dates, almonds, cashews, cinnamon, and vanilla protein powder. Nothing processed, nothing artificial.
    • No baking. Food processor, loaf pan, fridge. Only 10 minutes of hands-on time.
    • Vegan and gluten-free. Naturally, without any special swaps.
    • Soft and chewy like the real thing. The medjool dates give them that exact signature texture.

    Ingredients in these Copycat Snickerdoodle Rx Bars

    Dates - be sure to use gooey, pitted medjool dates for this recipe. If your dates are not soft, soak them in hot water for 10 minutes before blending with your other ingredients.

    Almonds - I always use raw, natural almonds with no added oils or extra ingredients

    Cashews - raw, unsalted works best! Roasted would work great too if you prefer a stronger, nuttier flavour.

    Sea Salt - omit if using salted almonds/cashews

    Cinnamon/allspice - adds the warmly spiced snickerdoodle flavours

    Protein powder - my favourite is Nuzest Vegan Vanilla Protein. You can also use unflavoured protein if you'd like!

    Top Tips:

    • Your dates must be soft and sticky. This is the most important thing. Dry dates will not break down properly and the bars will crumble instead of holding together. If in doubt, soak them in hot water for 10 minutes, drain well, and pat dry before blending.
    • Pulse the nuts first. Add the almonds and cashews to the food processor alone first and pulse into small pieces before adding the dates. This gives you a better texture with some nut chunks rather than a completely smooth paste.
    • Press firmly into the pan. Use the back of a measuring cup to really pack the mixture down. The more compact the layer, the cleaner your bars slice.

    These Copycat Snickerdoodle Rx Bars are the perfect homemade protein bars that are both healthy and delicious! Made with just a few simple ingredients and come together in minutes!

    Ingredients
      

    • 1 c pitted medjool dates
    • ½ c almonds
    • ¼ c cashews
    • 1 scoop vanilla protein
    • ½ teaspoon cinnamon
    • ¼ teaspoon all spice
    • ¼ teaspoon salt
    • 2-3 tablespoon water
    • Flakey sea salt for topping

    Instructions
     

    • Add almonds and cashews to a high speed food processor and pulse into small pieces. Add all other ingredients and blend until smooth. Add water by the tablespoon as needed until a doughy texture is formed.
    • Transfer batter to a lined loaf pan and press firmly into an even layer.
    • Place in fridge 1 hour to set and slice into bars!

    Notes

    *Use soft, pitted medjool dates for this recipe – if dates are not soft, soak them in hot water for 5-10mins, drain & pat dry, and continue on with recipe.

    Frequently Asked Questions for Copycat Snickerdoodle Rx Bars

    Can I make these without protein powder? Yes. The protein powder is optional. Leave it out and the bars will still hold together well from the dates and nuts. The flavour will be slightly less sweet and less vanilla-forward but still delicious.

    Can I use a different flavour of protein powder? Absolutely. Unflavoured protein works just as well here. Vanilla gives the most authentic snickerdoodle flavour but any neutral protein powder works at the same ratio.

    How long do these keep? Up to 2 weeks in the fridge in an airtight container, or up to 3 months in the freezer. I wrap mine individually in parchment paper before storing so they do not stick together.

    What makes these taste like snickerdoodles? The combination of cinnamon, allspice, and vanilla protein powder is what captures that warm, cozy snickerdoodle flavour. The dates add a natural caramel-like sweetness that rounds it all out.
