Dates - be sure to use gooey, pitted medjool dates for this recipe. If your dates are not soft, soak them in hot water for 10 minutes before blending with your other ingredients.
Almonds - I always use raw, natural almonds with no added oils or extra ingredients
Cashews - raw, unsalted works best! Roasted would work great too if you prefer a stronger, nuttier flavour.
Sea Salt - omit if using salted almonds/cashews

Copycat Snickerdoodle Rx Bars
Ingredients
- 1 c pitted medjool dates
- ½ c almonds
- ¼ c cashews
- 1 scoop vanilla protein
- ½ teaspoon cinnamon
- ¼ teaspoon all spice
- ¼ teaspoon salt
- 2-3 tablespoon water
- Flakey sea salt for topping
Instructions
- Add almonds and cashews to a high speed food processor and pulse into small pieces. Add all other ingredients and blend until smooth. Add water by the tablespoon as needed until a doughy texture is formed.
- Transfer batter to a lined loaf pan and press firmly into an even layer.
- Place in fridge 1 hour to set and slice into bars!
