These copycat homemade RX bars are made with just six ingredients you can actually read off the back of the original wrapper. Dates, almonds, cashews, egg whites, chocolate, and sea salt. No fillers, no added sugar, nothing you cannot recognise.

I started making these when I realised how straightforward the formula actually is. A food processor, six ingredients, and about ten minutes. The texture is spot on. That dense, chewy, slightly sticky bite that makes RX Bars so satisfying. And you can customise the flavour any way you like once you have the base down.
I always keep a batch in the fridge alongside my copycat snickerdoodle RX bars so I have two flavours to rotate through. And if you love a quick no-bake snack, my oatmeal cookie energy balls use the same food processor method in about the same amount of time.
Ingredients

- medjool dates
- almonds
- vanilla protein
- cacao powder
- sea salt
- tablespoon water
- cacao nibs or mini chocolate chips

Instructions


- Add almonds to a high speed food processor and pulse into tiny pieces. Add all other ingredients and blend until smooth. Add water by the tablespoon as needed until a doughy texture is formed
- Transfer batter to a lined loaf pan and press firmly into an even layer
- Place in fridge for 1 hour to set and slice into bars!
Note: Use soft, pitted medjool dates for this recipe - if dates are not soft, soak them in hot water for 5-10mins, drain & pat dry, and continue on with recipe.
Substitutions
- Vanilla protein - I use plant-based protein powder, but you can substitute egg white protein powder or whey protein for non-vegan diets
- Cacao powder -you can also use cocoa powder if preferred
- Raw almonds - any whole nuts can be used for this recipe. My recommended substitutes are peanuts or walnuts.

How to Store
Store in an airtight container in the fridge for up to 1 week. To freeze, wrap each bar individually and store in a freezer-safe container for up to 3 months. Thaw at room temperature before eating.Top Tips
- Use soft medjool dates. Dry or small dates will not blend down properly and the bars will crumble instead of holding together. If your dates feel firm, soak in hot water for 10 minutes and drain well before blending.
- Chill before slicing. Refrigerate or freeze until fully set before cutting. This is what keeps the bars holding their shape cleanly.
- Add water one tablespoon at a time. Pulse between each addition until the mixture just comes together. Too much water at once makes the bars sticky and hard to press.
Frequently Asked Questions for Copycat Rx Bars
Can I use a different protein powder flavour?
Yes. Unflavoured or vanilla protein both work well here. The chocolate sea salt flavour comes through strongly from the cacao and dates so any neutral protein powder works at the same ratio.
How long do homemade RX bars keep?
Up to 1 week in the fridge in an airtight container, or up to 3 months in the freezer wrapped individually. They are great to batch make and freeze.
Why won't my mixture come together?
Your dates are likely too dry. Soak them in hot water for 10 minutes, drain well, and blend again. Every batch of dates is slightly different in moisture level so small adjustments are completely normal.
Are these vegan and gluten-free?

Would it be possible to use figs instead of dates in this recipe? I love rx bars but I generally have figs on hand instead of dates.
