Almond Butter Granola

This almond butter granola is clustery, crunchy and will make your kitchen smell amazing! Perfect for on the go breakfast, healthy snacking, and everything in between!

Ingredients
  

  • 2 c rolled oats
  • 2/3 c walnuts
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 c almond butter
  • 1/4 c maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp melted coconut oil
  • 1 tbsp maca powder (optional)

Instructions
 

  • Preheat oven to 325F and line a baking sheet with parchment paper.
  • Combine all dry ingredients.
  • Combine wet ingredients.
  • Pour wet ingredients into dry and stir until oats are completely coated.
  • Spread mixture onto prepared baking sheet in an even layer and PRESS down with a spatula.
  • Bake for 25 mins until lightly golden.
  • Let cool completely before gently breaking into clusters! (Don’t skip this step as this is when the granola gets crispy!)

*Store in an airtight container or mason jars
