Granola is a staple in my house and I always have a batch going every other week. I used to always buy store bought granola, but once I tried making homemade granola, there was no going back! This almond butter granola is SO easy to make and requires just a few simple ingredients that you probably already have in your pantry. My favourite part is that it's super easy to customize to different flavours and you can totally add in any of your favourite mix in's like nuts, dried fruit, or chocolate chips!
What Makes this Almond Butter Granola so Healthy?
It's completely refined sugar free and naturally sweetened with maple syrup. Honey would also work great as a sweetener if you are not vegan.
This healthy granola is packed with whole grains and fibre. It's also easily made gluten free by using gluten free rolled oats.
Healthy fats - I used almond butter and walnuts in this batch for the perfect nutty combo! You can also substitute your favourite creamy nut butter, and add any nuts or seeds you'd like.
Unrefined Oil - This recipe is made with unrefined coconut oil which adds the best toasty flavour and also helps the granola become nice and crispy.

Almond Butter Granola
Ingredients
- 2 c rolled oats
- ⅔ c walnuts
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- ¼ c almond butter
- ¼ c maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoon melted coconut oil
- 1 tablespoon maca powder (optional)
Instructions
- Preheat oven to 325F and line a baking sheet with parchment paper.
- Combine all dry ingredients.
- Combine wet ingredients.
- Pour wet ingredients into dry and stir until oats are completely coated.
- Spread mixture onto prepared baking sheet in an even layer and PRESS down with a spatula.
- Bake for 25 mins until lightly golden.
- Let cool completely before gently breaking into clusters! (Don’t skip this step as this is when the granola gets crispy!)
