  • Lightly grease a microwave safe baking dish with cooking spray
  • Add in all ingredients and stir till combined
  • Slice bananas into thin circles. Then spread over pancake mixture.
  • Microwave pancake for 2 minutes
  • Add your favorite toppings and enjoy!

How to Store

Best eaten fresh straight from the microwave. If needed, store covered in the fridge for up to 1 day and reheat for 30 seconds.
 

Top Tips

  • Do not overmix the batter. Stir until just combined for the fluffiest result.
  • Fill the dish only three quarters full. The pancake expands as it cooks and needs room to rise.
  • Watch it from the 90 second mark. Microwave times vary. If it feels underdone, continue in 15 second increments until set.
  • Add toppings straight away. Maple syrup, peanut butter, whipped cream, or melted butter all work beautifully on top.
