    This banana microwave pancake is so easy to make and is ready in just 5 minutes! Perfect for a quick and healthy breakfast that also satisfies your sweet tooth.

    If you've been searching for easy breakfast recipes to try, this single serve pancake is a must! It basically tastes like you're eating dessert for breakfast, but is made with only 3 simple ingredients. The best part is that all you need is one dish, which saves on all the clean up and mess that comes with making regular pancakes. All you do is combine your ingredients together, microwave for 2 minutes and enjoy! This quick breakfast fix will be a total game changer for busy weekdays or lazy weekend mornings.

    If you are a pancake lover, my vegan birthday cake pancakes are worth making on a slow weekend morning when you have a little more time. And on the days I want something warm to drink alongside this I always reach for my pumpkin spice chai latte; the two together make the coziest breakfast.

    This microwave pancake is made with only 3 basic ingredients, and comes together in minutes. All you need is a baking dish and a microwave to whip it up!

    • Pancake Mix - any of your favorite pancake mixes will work! Be sure to use vegan pancake mix for plant-based diets.
    • Protein Powder - I love using vegan vanilla protein to add extra flavor to this recipe, but you can also substitute with unflavoured protein powder.
    • Sliced Banana - adds a natural sweetness while bringing all the cozy banana bread flavors.

    Instructions

    1. Lightly grease a microwave safe baking dish with cooking spray
    2. Add in all ingredients and stir till combined
    3. Slice bananas into thin circles. Then spread over pancake mixture.
    4. Microwave pancake for 2 minutes
    5. Add your favorite toppings and enjoy!

    • ½ c water
    • ½ banana sliced

    How to Store

    Best eaten fresh straight from the microwave. If needed, store covered in the fridge for up to 1 day and reheat for 30 seconds.
     

    Top Tips

    • Do not overmix the batter. Stir until just combined for the fluffiest result.
    • Fill the dish only three quarters full. The pancake expands as it cooks and needs room to rise.
    • Watch it from the 90 second mark. Microwave times vary. If it feels underdone, continue in 15 second increments until set.
    • Add toppings straight away. Maple syrup, peanut butter, whipped cream, or melted butter all work beautifully on top.

    Can I make this without protein powder? Absolutely. It is completely optional and the pancake works just as well without it.
