    2 Minute Strawberry Microwave Pancake, Single Serve

    This strawberry microwave pancake is my go-to when I am craving pancakes but do not want to deal with a stovetop, a stack of dishes, or waiting more than a few minutes. One bowl, three ingredients, two minutes in the microwave. That is literally all it takes.

    The chopped strawberries make it feel fresh and fruity without adding any complexity to the recipe. I love topping mine with a drizzle of peanut butter and extra fresh berries but maple syrup, yogurt, or whatever you have on hand all work beautifully.

    If you are a fan of the microwave method, my banana microwave pancake uses the exact same bowl and the same 2 minutes with a different flavour that is just as easy.

    On mornings when I want something a little more substantial alongside this I will also have a warm mug of my honey lemon ginger tea, the two together take under five minutes and feel like a proper breakfast. And if you love easy single-serve breakfasts, my almond croissant baked oats are worth adding to your rotation for days when you have a few extra minutes.

    Ingredients in this 2 Minute Microwave Pancake Recipe:

    Pancake Mix -you can use any pancake mix to suit your preferences or dietary needs

    Protein Powder - this is totally optional, but will increase the protein content of this recipe. My favourite protein to use in baking recipes is this clean lean vanilla protein.

    Water - you can also use milk in a 1:1 ratio for a thicker consistency

    Strawberries - I made this version with chopped strawberries, but you can add any mix-in's you'd like. Some great options are chocolate chips, pecans, sliced bananas and walnuts!

    Maple syrup, Peanut butter, Extra Strawberries - optional for topping

    This 2 minute microwave pancake is perfect for when you're craving pancakes but don't have time to make an entire batch. It's soft and fluffy, and requires only 3 simple ingredients!

    Equipment

    Ingredients
      

    • ½ c pancake mix
    • 1 scoop protein powder
    • ½ c water
    • 2 strawberries, chopped

    Instructions
     

    • Lightly grease a small microwavable dish. Add in all ingredients and stir to combine.
    • Slice strawberries into thin circles. Then spread over pancake mixture.
    • Microwave pancake for 2 minutes.
    • Add your favourite toppings and enjoy!

    How to Store

    Best eaten fresh straight from the microwave. If needed, store covered in the fridge for up to 1 day and reheat for 30 seconds.
     
     

    Top Tips

    1. Do not overmix the batter. Stir until just combined for the fluffiest result.
    2. Fill the dish only three quarters full. The pancake expands as it cooks and needs room to rise.
    3. Watch it from the 90 second mark. Microwave times vary. If it feels underdone, continue in 15 second increments until set.
    4. Add toppings straight away. Fresh strawberries, maple syrup, or a drizzle of almond butter all work beautifully on top.

    Frequently Asked Questions for Strawberry Microwave Pancake

    Why is my microwave pancake rubbery? Usually from overcooking. Every microwave runs slightly differently. Start checking at 90 seconds, it should look just set in the middle when you pull it out. Even 30 seconds too long makes it tough.

    Can I use a different pancake mix? Yes. Any pancake mix works here including gluten-free versions. Use the same ratio of mix to water and the recipe works the same way.

    Can I make this without protein powder? Absolutely. The protein powder is completely optional and the pancake works just as well without it. It just adds a little extra protein if you want a more filling breakfast.
