  • Add almonds and cashews to a high speed food processor and pulse into small pieces. Add all other ingredients and blend until smooth. Add water by the tablespoon as needed until a doughy texture is formed.
  • Transfer batter to a lined loaf pan and press firmly into an even layer.
  • Place in fridge 1 hour to set and slice into bars!

How to Store

Store in an airtight container in the fridge for up to 2 weeks, or freeze individually wrapped for up to 3 months.
Thaw at room temperature before eating

 

 

Top Tips

  • Dates must be soft and sticky. Dry dates will not break down properly and the bars will crumble. If in doubt, soak in hot water for 10 minutes, drain, and pat dry before blending.
  • Pulse the nuts first. Add almonds and cashews to the food processor alone and pulse into small pieces before adding the dates. This gives you better texture with some nut chunks rather than a completely smooth paste.
  • Press firmly into the pan. Use the back of a measuring cup to pack the mixture down. The more compact the layer, the cleaner the bars slice.
