  • Strawberry Glaze: Heat strawberries with maple syrup in a small saucepan over medium heat. Once the strawberries soften, mash them with a fork until you reach a puree texture.
  • Smoothie: Blend all ingredients except the coconut cream until smooth.
  • Assemble: Add the strawberry glaze to the bottom of your glass. Then swirl the coconut cream around the inside of the glass to create a “coconut cloud” design. Pour in your smoothie and enjoy!

How to Store:

Best served fresh. If you need to make it slightly ahead of time, blend the smoothie base and store it in a sealed jar in the fridge for up to 24 hours.
Make the glaze and assemble the glass fresh when ready to serve.
 

Top Tips

  1. Use frozen strawberries in the smoothie, fresh for the glaze. Frozen gives the thick, creamy texture. Fresh cooks down into a better glaze.
  2. Cool the glaze before assembling. Warm glaze melts the coconut cream. Let it cool to room temperature or pop it in the fridge for a few minutes first.
  3. Do not skip the coconut cream on the glass. Use full-fat straight from the can, applied cold. This is what makes it look like the real thing.
