The smoothie is a thick, creamy strawberry blend made with avocado, banana, dates, almond milk, and coconut cream, topped with a bright jammy strawberry glaze. The skin-boosting angle comes from the collagen peptides, sea moss gel, and hyaluronic acid mixed in; all of which are ingredients associated with skin health and hydration.
Hailey Bieber's name has since been removed from Erewhon's official menu as her contract has expired, but the smoothie itself lives on as the Strawberry Glaze Skin Smoothie and remains one of the store's best sellers.

Instructions


- Make the strawberry glaze: Add the strawberries and maple syrup to a small saucepan over medium heat. Cook for 5 minutes until the strawberries are soft, then mash with a fork into a chunky jam. Set aside to cool before assembling.
- Make the smoothie: Add all smoothie ingredients to a blender and blend on high until completely smooth and creamy.
- Assemble: Smear coconut cream up the inside of a glass in long strokes using the back of a spoon. This creates the signature cloud effect. Add a spoonful of strawberry glaze to the bottom of the glass. Pour the smoothie in slowly over the glaze. Finally, top with a little extra glaze and serve immediately.

Best served fresh. If you need to make it slightly ahead of time, blend the smoothie base and store it in a sealed jar in the fridge for up to 24 hours. Make the glaze and assemble the glass fresh when ready to serve.Top Tips
- Use frozen strawberries in the smoothie, fresh for the glaze. Frozen gives the thick, creamy texture. Fresh cooks down into a better glaze.
- Cool the glaze before assembling. Warm glaze melts the coconut cream. Let it cool to room temperature or pop it in the fridge for a few minutes first.
- Do not skip the coconut cream on the glass. Use full-fat straight from the can, applied cold. This is what makes it look like the real thing.
