Dark sweet cherries, frozen pineapple, avocado, coconut cream, and pitaya powder swirled into the most beautiful pink glass you have ever made at home. The original runs $28 CAD at Erewhon. This version costs a fraction of that and takes about five minutes.

I have been making Erewhon copycat smoothies for a while now and this one surprised me. The sweet cherry and pineapple combination is brighter and more refreshing than I expected and the pitaya powder gives it that stunning hot pink colour at the bottom of the glass. It is the kind of drink that looks like it took effort but absolutely did not.

- Frozen dark cherries
- Frozen pineapple or dragonfruit
- Avocado
- Cherry juice
- Organic Unsweetened Almond milk
- Maple syrup
- Magnesium powder

Instructions

- Smoothie: blend all ingredients together until smooth.
- Add coconut cream, followed by pitaya powder to the bottom of your smoothie glass. Swirl around to create a "cloud" design.
- Pour smoothie into your glass and enjoy!
Substitutions
- Frozen dark cherries - dark cherries give the deepest colour but any frozen cherries work fine
- Frozen pineapple - dragonfruit works as a substitute if you prefer
- Cherry juice - tart cherry juice gives the best flavour but any cherry juice works
- Almond milk - any nut milk or regular milk if not vegan
- Maple syrup - any liquid sweetener works here. Honey or agave at the same ratio
- Magnesium powder - Natural Calm is my favourite. Leave it out if you do not have any
- Collagen - substitute with unflavoured protein powder or leave it out entirely. Use a vegan collagen or plant-based protein powder to keep it fully plant-based.
- Coconut cream - thick canned coconut cream works best for the cloud effect at the bottom of the glass. Yogurt can work but will change the flavour
- Pitaya powder - used for the pink cloud design only. Omit if you do not have it and the smoothie tastes exactly the same.

Top Tips
- Use frozen fruit. This is what gives the smoothie its thick, creamy texture and vibrant colour.
- Adjust sweetness to taste. Add an extra tablespoon or two of maple syrup if you prefer a sweeter smoothie.
- Use thick canned coconut cream for the cloud design. Thin coconut milk will not hold its shape against the glass.
