    Sofia Richie Smoothie Erewhon Copycat (Sweet Cherry)

    The famous Sofia Richie Smoothie at Erewhon has been going viral for a reason! This homemade version is perfectly sweet, refreshing and costs a fraction of the price to make.

    Sofia's sweet cherry smoothie might just be my new favorite Erewhon smoothie. It's packed with delicious sweet cherry flavors, is loaded with healthy superfoods and the aesthetic is truly perfection. That being said, if you don't live near an Erewhon or just want to save the $28 (cad) price tag, you need to try this healthy homemade twist on the original. It's great for a healthy breakfast, post workout snack, or whenever you're craving a little sweet treat!

    Ingredients In Sofia Richie Smoothie

    • Frozen dark cherries
    • Frozen pineapple or dragonfruit 
    • Avocado
    • Cherry juice
    • Organic Unsweetened Almond milk
    • Maple syrup
    • Magnesium powder
    • Vegan collagen 
    • Organic Coconut Cream
    • Organic Pitaya Powder

    Instructions

    1. Smoothie: blend all ingredients together until smooth.
    2. Add coconut cream, followed by pitaya powder to the bottom of your smoothie glass. Swirl around to create a “cloud” design. 
    3. Pour smoothie into your glass and enjoy!

    Substitutions

    • Frozen Dark Cherries - dark cherries yield the most vibrant result but you can use any frozen cherries you have on hand
    • Frozen Organic Pineapple - substitute with dragonfruit if preffered!
    • Cherry Juice - I use organic tart cherry juice for best flavor. Any cherry juice will work for this recipe
    • Almond Milk - replace with any nut milk preferred or regular milk if not vegan
    • Maple Syrup - use pure 100% maple syrup to keep this recipe refined sugar free. You can also substitute with any liquid sweetener such as honey or agave.
    • Magnesium Powder - my favorite is natural calm magnesium powder. You can omit if you don't have any on hand 
    • Collagen - be sure to use vegan collagen for plant-based diets. You can leave this out if you don't like collagen, or alternatively substitute with unflavoured protein powder.
    • Coconut Cream - thick canned coconut cream works best for the classic "cloud" smoothie design. You can substitute yogurt but it will change the flavor.
    • Pitaya Powder - this is used to create the stunning smoothie design but will not affect the recipe itself if omitted

    3 Top Tips for Success

    1. Use frozen fruit to yield the thickest smoothie texture and most vibrant color
    2. Add an extra 2tbsp of liquid sweetener if you prefer a sweeter smoothie flavor
    3. Use thick coconut cream for your smoothie design. Liquidy coconut milk or cream will not work as well.

    Can I customize this smoothie?

    Yes totally! Feel free to make your own smoothie twist and add in your favorite superfood or toppings. Some of my favorite additions include hemp hearts, protein powder and cowboy vanilla colostrum.
