    I love the coconut in these cookies because its add that little extra chew and a bit of natural sweetness! They're made with all natural ingredients that you probably already have in your pantry and contain no refine sugars. The best part about these cookies is that they're SO easy to make and come together so quickly.     Tips To Make this Recipe Perfectly

    Use rolled oats! This ensures that the cookies have that delicious chewy texture and bake up nicely in the oven

    Let the cookies cool on your baking sheet for 10 minutes after taking them out of the oven. This allows the cookies to set and helps them hold together

    Use a cookie scoop to scoop the dough onto baking sheets! Usually for baking cookies I don't use a scoop but for these ones it works perfectly! This helps ensure that all your cookies are the same size and shape, and also prevents making a mess since oatmeal cookie dough is quite soft and chunky.

    Healthy Oatmeal Chocolate Chip Cookies

    Ingredients
      

    • ¼ c melted coconut oil
    • ½ c coconut sugar
    • ½ c rolled oats
    • ¾ c oat flour
    • ⅓ c mashed banana (about 1 medium banana)
    • 1.5 teaspoon vanilla extract
    • ¾ c unsweetened shredded coconut
    • 1 egg (flax egg if vegan - see notes below)
    • ¼ teaspoon salt
    • ½ teaspoon baking soda
    • ½ teaspoon baking powder
    • ½ c dark chocolate chips or vegan chocolate chips

    Instructions
     

    • Preheat the oven to 350F and line two baking sheets with parchment paper
    • In a mixer, beat together the coconut oil, mashed banana, sugar, and vanilla on low speed until smooth.
    • Add in the egg and mix on medium speed until fluffy and smooth (about 1 minute).
    • In a medium bowl, mix together the oats, oat flour, baking soda, baking powder and salt
    • Slowly beat in your oats mixture on low speed until combined. Add in coconut and beat on low speed till just combined
    • Remove bowl from the mixer and fold in the chocolate chips
    • Use a medium cookie scoop to place about 1 heaping tablespoon of dough on baking sheet. Repeat with remaining batter, leaving about 2 inches between each cookie
    • Bake for 10-12 minutes until edges are lightly golden brown
    • Let cool 10mins before transferring to a wire rack or serving 

    Notes

    *for flax egg, mix 1tbsp of ground flaxseed with 3tbsp water and let sit to gel for 5 minutes
    *option to substitute oat flour for all-purpose flour
