Right here is my absolute dream meal! A delicious power bowl loaded with fresh veggies, falafel, quinoa salad, and creamy vegan tzatziki to top it off. I could eat this almost every day and not get tired of it! I usually meal prep my falafel, quinoa salad and tzatziki on the weekend so they’re ready to easily add to my lunches throughout the week. The best part about these vegan falafel bowls is that they’re so customizable and fun to make! Feel free to load it up with any of your favourite toppings like hummus, tabbouleh, tahini dressing, you name it!

Vegan Falafel Bowl
Ingredients
Baked Falafel

Quinoa Salad
- ½ c cooked quinoa
- ½ c finely chopped parsley
- ¼ c corn
- ¼ c diced red pepper
- 1 clove minced garlic
- 1 tablespoon lemon juice
- 1 teaspoon olive oil
- Pinch Salt
- Fresh ground black pepper (to taste)
Vegan Tatziki
- 1 c coconut yogurt
- ¼ c grated cucumber (after excess water is pressed out)
- 3 tablespoon fresh dill (minced)
- 1.5 tbsp lemon juice
- 2 cloves minced garlic
- salt/pepper to taste
Instructions

Quinoa Salad
- Mix together all ingredients in a bowl. Let sit in the fridge for 15 minutes to all flavours to sink in.
Vegan Tzatziki
- Mix all ingredients together in a small bowl and set in fridge until ready to eat.
Assemble
- Assemble your bowl! Add a bed of mixed greens to your bowl. Top with falafel, quinoa salad, vegan tzatziki, fresh veggies, and any other toppings desired!
