    These almond butter oatmeal bars are soft baked, so easy to whip up, and will make your house smell like a dream! They're both vegan and gluten free, and are perfect for breakfast, dessert or snacking in between!

    Tips to Make this Recipe Perfectly

    Make sure your bananas are ripe! This recipe doesn't have much sugar in it as most of the sweetness comes naturally from those ripe bananas! They're also much easier to mash when they are ripe and will mix together better in the batter.

    Use creamy, runny nut butter! It blends smoothly in these bars and helps all the ingredients stick together. I've tried this recipe with almond butter and peanut butter and both worked perfectly!

    These oatmeal bars are soft baked, so easy to whip up, and make your house smell like a dream! They're both vegan and gluten free and are perfect for breakfast, dessert, or snacking in between!

    Ingredients
      

    • 1 c rolled oats
    • 1 ¼ c oat flour
    • 1 teaspoon baking powder
    • 1 teaspoon cinnamon
    • ½ teaspoon salt
    • 1 c mashed bananas (about 2 large bananas)
    • ½ c creamy almond butter
    • ¼ c unsweetened applesauce
    • ¼ c maple syrup
    • 1 teaspoon vanilla extract
    • ¼ c vegan chocolate chips + more for sprinkling on top

    Instructions
     

    • Preheat the oven to 350F and line a 9x9 baking pan with parchment paper.
    • In a medium sized bowl, combine the oats, oat flour, baking powder, cinnamon and salt. Set aside.
    • In another bowl, mash the bananas with a fork and then stir in the almond butter, applesauce, maple syrup, and vanilla extract. Mix until fully combined and no clumps remain.
    • Slowly add in the oat mixture and stir until combined.
    • Fold in the chocolate chips.
    • Transfer the batter into prepared baking pan and sprinkle on additional chocolate chips. Bake for 25 minutes or until toothpick comes out clean and top is golden brown.
    • Cool for 10 minutes in the pan and then carefully transfer to a wire rack to cool completely before slicing.

    Notes

    *You can substitute the almond butter for cream peanut butter or sun butter for a nut free option
    *The maple syrup can be substituted for date syrup
    *Feel free to add ¼c of walnuts or other nuts if desired

      Just made this recipe a few days ago - delicious! Not too sweet and just perfect in flavour. Love that it’s gluten free and only sweetener is a little maple syrup. This is a keeper for sure!
