    This vegan banana bread baked oatmeal is the perfect make ahead breakfast for busy mornings. It has the best banana bread flavours and is packed with healthier ingredients to fuel your day.

    Banana Bread Baked Oatmeal

    If you haven't tried baking oatmeal before, it's truly a game changer for breakfast meal prep. I always have a batch prepped for the week and this banana bread flavour is one of my favourites. It's loaded with cozy banana flavours and will truly make your kitchen smell like a dream. Plus it's so easy to customize with your favourite mix-in's and add-in's.

    Baked Oatmeal

    Ingredients in Banana Bread Baked Oatmeal:

    Rolled Oats - be sure to use gluten-free rolled oat for gluten-free diets

    Almond Milk - I always use original, unsweetened almond milk. You can also use regular milk for nut allergies or a non-vegan version

    Ripe Bananas - spotty, overripe bananas work best for this recipe

    Vanilla Extract - adds a lovely subtle vanilla flavour

    Maple Syrup - I use pure, 100% maple syrup

    Protein Powder - optional for an added protein boost

    Cinnamon

    Baking Powder

    Salt

    Chocolate Chips

    How to Make Banana Bread Baked Oatmeal

    1. Preheat oven to 350F and grease an oven-safe baking dish.
    2. Mash the bananas in a baking dish. Then add in all your dry ingredients, followed by wet ingredients. Stir until mixture is combined and oats are fully coated.
    3. Fold in chocolate chips.
    4. Optional: Add on extra sliced bananas and chocolate chips. Layer them across the top of your oats in any pattern you'd like!
    5. Bake for about 40 minutes until the top is lightly golden.
    6. Let your baked oats cool. Then cut into squares and serve!

    How to Store this Vegan Baked Oatmeal

    Leftovers can be stored in the fridge for up to 5 days. I like slicing my baked oatmeal into single serve squares and storing in air tight containers so they are ready to go in the mornings. You can also store in the freezer for up to 2 months. When ready to eat, warm it up in the toaster oven until heated through. I love topping mine with nut butter, honey and a splash of nut milk.

    • 2 c rolled oats

    • 2 ripe bananas
    • 1 teaspoon vanilla extract
    • 1 scoop protein powder (optional)
    • 1 teaspoon cinnamon
    • 1 teaspoon baking powder
    • ¼ teaspoon salt
    • 2 tablespoon maple syrup
    • ½ c chocolate chips

      I made baked oatmeal with a different person’s recipe before and it wasn’t that great tasting. This recipe is awesome though! So delicious and easy!!
