Peanut butter cookies have been a favourite of mine for as long as I can remember! That gooey inside texture, combined with the roasted peanut flavour is truly a match made in heaven. After devouring yet another one at a local bakery the other day, I set out on a mission to come up with my own healthier homemade version. These grain free peanut butter cookies are every peanut butter lover's dreams come true! They're loaded with all the roasted nutty flavours, have an amazing chewy inside texture and take just 20mins from start to finish! Trust me, you won't even miss those bakery cookies once you try this recipe!
Ingredients in These Grain Free Peanut Butter Cookies:
Peanut Butter - I love using roasted, creamy peanut butter with no added ingredients for these cookies. You can also use any other creamy nut butter if you'd like. Almond butter would work great as a substitute!
Coconut Sugar - adds a light sweetness to these cookies while keeping them refined sugar free
Honey - you can also use maple syrup in a 1:1 ratio
Almond Flour - adds a lovely texture to these cookies while keeping them chewy and grain free.
Egg - sub flax egg for vegan
Vanilla Extract
Baking soda
Salt + flakey sea salt for topping (optional)
Tips for Making these Healthy Peanut Butter Cookies
-Line your baking sheet with parchment paper to ensure the bottoms don't brown too quickly.
-Let cookies cool at least 20 mins on your baking sheet after baking! This allows them to set and firm up and they will be soft and fragile right out of the oven.
-These cookies have a delicious soft and chewy texture. Bake 1-2 mins extra if you prefer a firmer cookie texture.

Grain Free Peanut Butter Cookies
Ingredients
- 1 c creamy peanut butter
- ¼ c coconut sugar
- ¼ c honey
- 1 egg
- 1 teaspoon vanilla extract
- ⅓ c almond flour
- ¼ teaspoon baking soda
- ¼ teaspoon salt (if your peanut butter isn't salted)
- Flakey sea salt (optional for topping)
Instructions
- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a small bowl, combine almond flour, baking soda and salt.
- In a medium bowl, combine peanut butter, coconut sugar, honey, egg and vanilla extract.
- Add dry to wet and stir till combined.
- Scoop dough into balls and place on lined baking sheet. Use a fork to create cross-cross design.
- Bake at 350F for 11-13 mins.
- Let cool completely. Top with flakey sea salt if desired and enjoy!
