If I am buying bananas for the week, I am making a batch of these. Five minutes of hands-on time and then the freezer does everything else. I always keep a stash of this peanut butter banana bark alongside my strawberry matcha yogurt clusters and my frozen greek yogurt bites; between the three of them I basically have a full freezer snack drawer sorted for the week.

- Natural Peanut Butter
- Chocolate Chips
- Flaky Sea Salt

Instructions
- Slice bananas and arrange in a single layer across a parchment lined baking sheet
- Spread peanut butter over bananas in an even layer - use a spatula to spread more easily.
- Pour on melted chocolate. Then sprinkle on shredded coconut + flakey sea salt
- Freeze about 1 hour until completely set. Break into pieces and enjoy!
Note: Store leftovers in an airtight container in the freezer.
Substitutions
- Natural Peanut Butter - I use unsweetened, creamy peanut butter for this recipe. You can substitute with almond butter or cashew butter if desired. Sunflower seed butter can also be used as a nut free alternative.
- Chocolate Chips - feel free to use your favorite type of chocolate for the chocolate layer! My favorites are milk chocolate, dark chocolate chips, or a combination of both!
- Flaky Sea Salt - optional but highly recommended for a delicious sweet and salty combo.

Top Tips for Success
- Use very ripe bananas. The spottier the better. They are sweeter, softer, and press down onto the baking sheet much more evenly than a firm banana.

- Have your toppings ready before you open the freezer. The banana layer freezes faster than you think. I always set out my chocolate chips, coconut, or whatever I am using before I even start so everything is ready to go the moment I need it.
- Store in a zip-lock bag, not stacked on a plate. Individual pieces in a freezer bag stay separated and are so much easier to grab one at a time without the whole batch breaking apart.
