    This vegan peppermint bark is made of dreamy swirls of white and dark chocolate, topped with crunchy candy cane pieces. It's the most delicious sweet treat that's perfect for snacking or gifting this holiday season.

    Ingredients

    • Dark chocolate chips
    • Coconut oil
    • White chocolate chips
    • Peppermint Extract
    • Organic Candy Canes

    Instructions

    1. Melt dark chocolate chips with coconut oil in the microwave at 20 second increments till smooth. Stir in ⅛tsp peppermint extract.
    2. Pour chocolate in an even layer across a parchment lined baking sheet
    3. Repeat with white chocolate. Then pour on baking sheet overtop of your dark chocolate layer
    4. Use a toothpick to swirl together and create a marbling design
    5. Crush candy canes and sprinkle over top layer
    6. Place in the fridge or freezer till hardened. Break into pieces and enjoy!

    Substitutions

    • Peppermint extract: If you don't have any on hand, you can substitute with 2-3 drops peppermint oil.
    • Candy canes: Any candy canes or peppermint candy will work for this recipe.
    • Chocolate: I used melted white chocolate and dark chocolate for this version. You can use any preferred chocolate, such as semi-sweet chocolate, a white chocolate bar, or any others! Be sure to use unsweetened chocolate to keep this recipe lower in sugar.
    • Coconut oil: use refined coconut oil for a neutral flavor.
