This sweet potato baked oatmeal is loaded with cozy goodness and topped with a delicious, crunchy pecan topping. It feels like you're eating cake for breakfast, but is vegan, gluten free and made with good for you ingredients!
This sweet potato oatmeal was inspired by those warming sweet potato casseroles that come around every fall! It's packed with all the cozy goodness and truly feels like you're eating cake for breakfast. I still can't believe that these baked oats are made from all wholesome ingredients like oats, sweet potatoes, ground flaxseed and almond milk. Finally a breakfast cake that's both healthy and irresistibly delicious!
HEALTHY SWEET POTATO BAKED OATMEAL INGREDIENTS
Rolled oats - rolled oats work best for this baked oats recipe. Quick oats and instant oats have a different texture and cooking time. For this baked oatmeal, I used One Degree Organics sprouted rolled oats.
Sweet Potatoes - the sweet potato puree provides that cozy, slightly sweet taste. I bake my sweet potatoes ahead of time, so they're ready to go in the morning. To bake your sweet potatoes, simply wash them, poke a few holes with a fork, and baked at 425F for 40 minutes. Then let cool, remove the skin and blend or mash to create your sweet potato puree.
Almond milk - I love the taste of almond milk in these oats, but you can use any type of milk you'd like! Cashew milk or oat milk also sound great for this recipe!
Pure maple syrup - This adds just a slight sweetness to these baked oats. I didn't use much in this recipe, so if you prefer a sweeter taste, feel free to add in another tbsp.
Pecans - These make the BEST topping for these sweet potato oats and add that slight bit of crunch!
Spices - I used cinnamon and nutmeg for that extra warm and cozy spice! Feel free to add a little all spice too if you'd like.

Sweet Potato Baked Oatmeal
Ingredients
- ½ c rolled oats
- 1 teaspoon chia seeds
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ⅔ c almond milk
- 2 tablespoon sweet potato puree
- ½ tablespoon maple syrup
- 1 tablespoon chopped pecans
- ½ scoop vanilla protein powder* optional
Instructions
- Add all ingredients except pecans to a high speed blender or food processor and blend until smooth
- Pour batter into a small, lightly greased baking dish and top with chopped pecans.
- Bake at 375F for 23-25mins until puffed up and lightly golden.
- Top with a drizzle of almond butter and a splash of almond milk, and enjoy!
