Vegan Basil Pesto
This easy basil pesto is vegan, gluten free, and every bit as tasty as traditional pesto. It comes together in just 5 minutes and is perfect for sauces, pasta, pizza, salads, and more!
Ingredients
- 2 cups fresh basil leaves
- 1/4 cups walnuts
- 1/3 cup olive oil
- 1 tbsp lemon juice
- 2 cloves garlic
- 2 tbsp nutritional yeast
- 1/2 tsp sea salt
Instructions
- Combine all ingredients except olive oil in a food processor and blend until combined and a paste forms.
- Slowly drizzle in olive oil while the food processor is still running and pulse until incorporated.
- Taste and adjust flavour as needed. Add more olive oil for a smoother pesto, nutritional yeast for an extra cheesy flavour, or nuts for a nuttier flavour.
This pesto is so bright and vibrant! Sometimes it is hard to find pine nuts, so I really love that you have walnuts in the ingredient list. This would make such a dreamy pasta sauce!
