Vegan Chickpea Cookie Dough Blondies

These chickpea cookie dough blondies are soft, ooey gooey, and loaded with those melty chocolate chips! They’re naturally vegan, grain free and require only 10 simple ingredients to make. Perfect for a healthy afternoon snack or late night sweet tooth fix!

You read right, these ooey gooey blondies are made from a main secret ingredient…. chickpeas!! They create that soft, moist texture that we all want in a blondie and don’t have a super strong taste. The chickpeas combined with the almond butter come together to create a smooth creamy batter and are balanced out with the lightness of almond flour to create the texture of your dreams! Not to mention that these blondies are packed with protein, and healthy fats, making them a perfect afternoon pick me up, grab and go breakfast, or late night sweet tooth fix!

Vegan Chickpea Cookie Dough Blondies

Ingredients
  

  • 1 15oz can chickpeas (drained and rinsed)
  • 1/2 c almond butter
  • 1/4 c maple syrup
  • 2 tbsp coconut sugar
  • 2 tsp vanilla extract
  • 1/4 c almond flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 c vegan chocolate chips

Instructions
 

  • Preheat oven to 350F and grease an 8×8 baking pan.
  • Add all the ingredients to a food processor and blend until smooth.
  • Gently fold in the chocolate chips.
  • Transfer batter to pan and use a spatula to create an even layer. Top with additional chocolate chips if desired.
  • Bake for 20-25 minutes until edges are lightly golden brown and toothpick comes out clean (batter should looks just slightly underdone as they will firm up after cooling.)
  • Cool for 20 minutes before slicing and serving. Store any leftovers in the fridge!

Notes

*Option to substitute any nut butter for the almond butter, or sunflower seed butter for nut free
*Have not tested any other flour substitutes
