These donuts are every donut lovers dream come true!! They're oven baked, not fried, made with better for you ingredients, and taste even better than your classic bakery donuts! I've been experimenting with so many different donut flavours ever since I got my donut pan. We've done everything from gingerbread, to pumpkin spice, to chocolate espresso, so this birthday cake version was a long time coming! These donuts are loaded with the best cakey flavours and honestly taste like a party in every bite! Plus, sprinkles make everything better who's with me?

These donuts couldn't be easier to make! All you do is combine your ingredients together, transfer the batter to your donuts moulds and wait for them to bake! Since they don't contain any yeast, they take just a few minutes to prep and are completely hassle free! But don't worry, they still rise and get SUPER fluffy that no one would ever know they're yeast free! These donuts are also made naturally vegan, gluten free and dairy free! I used a traditional glaze on top which I highly recommend for the most delicious tasting donuts! You could also dip them in melted coconut butter or another pre-made frosting if you'd like.
TIPS TO MAKE THE PERFECT VEGAN BIRTHDAY CAKE DONUTS:
Don't Overmix! - be sure to incorporate your ingredients only until they are just combined. The air bubbles in the donut batter are what makes these donuts so light and fluffy!
Let cool before frosting - as tempting as it is to frost your donuts right away and dig in, make sure your donuts are completely cooled before frosting. We want that glaze to spread nicely on top, instead of melting into the donuts.
Fill donut moulds ¾ way full - this gives your donuts the right amount of room to puff up and also get nice and fluffy!

Vegan Birthday Cake Donuts
Ingredients
- 1 c gf flour or all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ⅓ c organic cane sugar
- ½ c almond milk
- 1 teaspoon apple cider vinegar (sub vinegar)
- 2 tablespoon coconut oil (melted and cooled)
- ¼ c applesauce
- 1 teaspoon vanilla extract
- 2 tablespoon sprinkles
Vanilla Glaze
- ⅔ c powdered sugar
- 1 tablespoon almond milk
- ¼ teaspoon vanilla extract
- 2 tablespoon sprinkles (for topping)
Instructions
- Preheat oven to 375F and grease a 6 donut pan.
- In a large bowl, whisk together all the dry ingredients except sprinkles.
- In another bowl, stir together wet ingredients until fully combined.
- Pour wet ingredients into dry and mix until just combined (do not overmix!)
- Gently fold in sprinkles.
- Spoon mixture into a piping bag or large ziploc bag and cut a hole in the corner. Pipe batter into your donut moulds, filling each ¾ of the way full.
- Bake for 10-12 minutes or until toothpick comes out clean. Allow donuts to cool completely before frosting.
- For the glaze: mix together all the ingredients in a shallow bowl until smooth and silky. Dip cooled donuts into the glaze and top with extra sprinkles. Place on a cooling rack for about 20 minutes to allow glaze to set. Enjoy!
