Alfredo sauce was always my favourite growing up and a classic fettuccini alfredo was my go to meal almost any time we had a pasta night. I just love how creamy it is and paired with some grated parmesan cheese, it’s truly a combo that’s hard to beat! This vegan cauliflower alfredo sauce honestly exceeded ALL my expectations! It’s so smooth, rich and dare I say, even creamier than your regular alfredo sauce! Plus, it’s packed with hidden veggies, made with wholesome ingredients, and is entirely dairy free. Trust me, you won’t even miss the milk or heavy cream in this recipe.

Cauliflower Alfredo Sauce

Tips to make the best vegan cauliflower alfredo sauce:

Use a HIGH speed blender or food processor – If your blender is not high speed, soak your cashews in hot water for 15 minutes before blending.

Steam your cauliflower florets – This recipe works best with steamed cauliflower! It blends together seamlessly with all the ingredients and results in the creamiest pasta sauce! Roasting your cauliflower will work as well.

Add any desired mix-ins – feel free to add any extra veggies or mix ins you’d like! I love adding spinach, mushrooms or chopped broccoli.

Ingredients
  

  • 2 c steamed cauliflower florets
  • 1/2 c cashews
  • 1/2 c water
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 2 tbsp nutritional yeast
  • 1 tbsp olive oil
  • Black pepper
  • Pasta of choice (if desired)

Instructions
 

  • Blend all ingredients together in a HIGH SPEED blender until smooth and creamy
  • Pour sauce over heated pasta. Top with cracked pepper & chili flakes if desired and devour!

Notes

*If you donโ€™t have a high speed blender, soak cashews in hot water for 15mins before blending
