The best part is that these fluffy pancakes come together just using a blender. All you do is add in all your ingredients, blend and cook. They're the perfect easy breakfast recipe and are so simple to whip up!

Ingredients In Birthday Cake Pancakes
These birthday pancakes are made with simple ingredients, and skip the butter and dairy usually found in classic pancakes. They're such an easy recipe and so much fun to make!
- Rolled Oats - provide whole grains and are high in fibre. You can also use quick oats if preferred
- Almond milk - feel free to substitute any non-dairy milk (or regular milk if not following a plant-based diet)
- Banana - extra ripe, spotty bananas work best for this recipe. They add the perfect natural sweetness to this pancake recipe
- Coconut Oil - I like using refined coconut oil for it's neutral flavor
- Coconut Sugar - adds a slight sweetness without adding any refined sugars
- Baking Powder - helps these pancakes rise and become extra fluffy
- Almond Extract - this gives these pancakes that delicious cake batter flavor! You can use vanilla extract instead if you don't have any on hand
- Rainbow Sprinkles - a must for any birthday cake flavored recipe! Be sure to use vegan sprinkles for plant-based diets.

Instructions
- Add all ingredients except sprinkles to a high speed blender and blend on high until almost smooth
- Fold in sprinkles by hand.
- Heat a non-stick pan or griddle over medium heat and coat with cooking oil or nonstick spray
- Scoop about ⅓ cup of batter onto hot griddle. Cook pancakes about 2-3 min, until small bubbles form at the top.Then flip and cook until both sides are golden brown. Repeat with remaining batter, coating pan with cooking oil in between each if needed. Lower heat if pancakes are browning too quickly.
- Top with maple syrup and extra sprinkles. Enjoy!

How To Store Cake Batter Pancakes
Store leftover pancakes in an airtight container in the fridge for up to 3 days. To reheat, simply place on a microwavable plate and cover with a paper towel. Reheat for 20-30 seconds.
3 Top Tips for Success
1. Blend your pancake batter right before cooking your pancakes. If you let your batter rest for too long, it will thicken and start to loose it's moisture.
2. Be sure to preheat your pan or griddle before adding your pancake batter. We want our pancakes to be a perfect golden brown and cook evenly, so this step is super important!
3. Lower heat if needed to ensure your pancakes don't brown too quickly. Your pancakes should be just golden brown on the outside and cooked through on the inside.
