    These vegan cosmic brownies are rich, fudgy and topped with a creamy chocolate ganache. They're the perfect make-ahead treats to have on hand for whenever that sweet craving hits.

    If you're a fan of the famous Little Debbie's Cosmic brownies like me, you need to try this healthier homemade version! I just loved cosmic brownies growing up and they were definitely a staple lunchbox snack that I always looked forward to. This plant-based recipe tastes just a s good, if not better than the classic cosmic brownies. They're fudgy, decadent, and topped with a chocolate ganache frosting that is just to die for!

    The best part about these decadent brownies is that they're actually made with healthier ingredients and are free from refined sugars. They're also vegan, grain free, gluten free and dairy free! I love that this recipe is also completely no bake, so it's easy to prep without any cooking time required.

    Ingredients

    • Medjool Dates - be sure to use those extra soft, pitted dates for the best fudgy texture
    • Walnuts - raw, unsalted walnuts work best for this recipe
    • Almond Flour - to keep this recipe gluten free
    • Cocoa Powder - dutch-pressed cocoa will provide the richest flavor
    • Almond Milk - use unsweetened almond milk to keep this recipe lower in sugar
    • Vanilla Extract - I always opt for 100% pure vanilla extract
    • Rainbow Chips - for the classic cosmic brownies look
    • Chocolate Chips - be sure to use vegan chocolate chips to keep this recipe plant based
    • Coconut Cream - the top, thick part of canned coconut milk

    Instructions

    1. Brownie: Combine all ingredients in a food processor until a brownie-like consistency is achieved. Press the mixture into your prepared pan in an even layer.
    2. Chocolate Ganache Icing: add coconut cream to a large bowl and microwave 45sec. Pour over chocolate chips, then let sit 5 minute. Whisk ingredients together until smooth. If your chocolate is not fully melted, microwave another 20 seconds. Pour ganache onto brownie layer and scatter rainbow candy chips over top of the brownies.
    3. Place the brownie tray in the freezer for at least 2 hours to firm up. Once set, slice into squares and enjoy!
    4. Store in the freezer and thaw for 10 minutes before serving.

    How To Store Healthy Cosmic Brownies

    These homemade cosmic brownies are best stored in an airtight container in the fridge. They will stay fresh for up to one week. These vegan brownies can also be frozen for up to 3 months. When ready to eat, thaw for 10 minutes at room temperature. 

    3 Top Tips For Success

    1. Be sure to use soft, gooey medjool dates for the best chewy brownie texture. If your dates are not soft, soak in hot water for 10mins before blending.
    2. Use high quality cocoa powder - this makes such a difference in getting the best chocolate brownie flavor. Opt for a dutch-pressed cocoa powder if available as oppose to a generic grocery store brand.
    3. Chill brownies in the freezer for at least two hours before slicing. This gives them optimal time to firm up and allows for the chocolate ganache to set.
