See recipe card for quantities.
Instructions
- Preheat oven to 375F and grease a 6 donut pan.
- In a large bowl, whisk together all the dry ingredients.
- In another bowl, stir together wet ingredients until fully combined.
- Add dry ingredients to wet and mix until just combined (do not overmix! The air bubbles keep the donuts light and fluffy.)
- Spoon mixture into a piping bag or large ziploc bag and cut a hole in the corner. Pipe batter into your donut moulds, filling each ¾ of the way full.
- Bake donuts for 10-12 minutes or until toothpick comes out clean. Allow donuts to cool completely before frosting.
- For the glaze: microwave chocolate and coconut oil in a small bowl till melted. Dip cooled donuts in your glaze, then sprinkle top of the donuts with crushed candy canes and enjoy!
Substitutions
- White wheat flour - substitute with gluten-free flour, oat flour or all-purpose flour
- Cacao powder - natural cocoa powder can also be used if preferred

- Coconut oil - substitute with melted vegan butter if desired
- Candy canes - any type of candy canes or peppermint candies will work for this recipe!
- Chocolate chips - be sure to use vegan chocolate chips if following a plant-based diet

How To Store These Vegan Peppermint Donuts
The best way to store these peppermint donuts is in an airtight container in the fridge. They will stay fresh for up to 5 days.
Top Tips for Success
- For best results, mix batter until just combined to keep these donuts light and fluffy. Don't over-mix!
- Cool donuts completely before frosting to avoid your glaze melting into your donuts.
- Fill doughnut pan just until each mold is ¾ full to allow room for them to expand and keep their shape when baking.
FAQs
Can I double the batch?
Yes, definitely! Simply double the recipe quantities and use a 12 donut pan to double the quantity.
Can I use store bought frosting?
Any frosting will work great for this recipe! I love using my easy chocolate peppermint frosting recipe, but store bought chocolate glaze would also be a delicious alternative.
What if I don't have peppermint extract?
The peppermint extract is what gives the donut batter a delicious mint flavor. If you don't have any on hand, the recipe will still turn out great, it just won't have that extra peppermint flavor. As an alternative, substitute with vanilla extract and add extra bits of candy canes on top!
