I used to buy protein bars from grocery stores all the time before I came up with this homemade recipe. Don't get me wrong, I still buy some from time to time, but now I truly prefer making homemade protein bar recipes, without any of the added sugars or fillers.

Plus, you can enjoy this rx protein bar recipe from the comfort of your home, while saving money at the same time. Ingredients
- medjool dates
- almonds
- vanilla protein
- cacao powder
- sea salt
- tablespoon water
- cacao nibs or mini chocolate chips

Instructions
- Add almonds to a high speed food processor and pulse into tiny pieces. Add all other ingredients and blend until smooth. Add water by the tablespoon as needed until a doughy texture is formed
- Transfer batter to a lined loaf pan and press firmly into an even layer
- Place in fridge for 1 hour to set and slice into bars!
Note: Use soft, pitted medjool dates for this recipe - if dates are not soft, soak them in hot water for 5-10mins, drain & pat dry, and continue on with recipe.
Substitutions
- Vanilla protein - I use plant-based protein powder, but you can substitute egg white protein powder or whey protein for non-vegan diets
- Cacao powder -you can also use cocoa powder if preferred
- Raw almonds - any whole nuts can be used for this recipe. My recommended substitutes are peanuts or walnuts.

Store these homemade RX bars in an airtight container in the fridge for up to one week. For a great way to extend their shelf life, freeze them by individually wrapping each bar and storing in an airtight container. They’ll last up to 3 months frozen. Simply thaw at room temperature when ready to enjoy. It’s a great way to have a healthy snack ready with little time.
3 Top Tips For Success
- Use soft, gooey Medjool dates for the best texture; dry, small dates won’t blend as well and will cause the mixture to be too crumbly
- Be sure to freeze or refrigerate until your bars have set before slicing. This is the perfect way to ensure they hold their shape.
- Add water 1 tablespoon at a time, pulsing between each addition. This convenient way prevents your bars from making any sticky mess and helps achieve the desired consistency.
