    Copycat Homemade Rx Bars Recipe (Chocolate Sea Salt)

    These copycat homemade rx bars come together with just 6 simple and clean ingredients, making them a breeze to customize with any flavor combination you'd like! They’re perfect for boosting your protein intake with a homemade version that’s both vegan and gluten-free.

    I used to buy protein bars from grocery stores all the time before I came up with this homemade recipe. Don't get me wrong, I still buy some from time to time, but now I truly prefer making homemade protein bar recipes, without any of the added sugars or fillers.

    The best part? These homemade protein bars make a great snack for throughout the week, offering a delicious and nutritious option that’s perfect for busy days. Plus, you can enjoy this rx protein bar recipe from the comfort of your home, while saving money at the same time. You might want to make a double batch because these chocolate protein bars never last long over here!

    Ingredients

    • medjool dates
    • almonds
    • vanilla protein
    • cacao powder
    • sea salt
    • tablespoon water
    • cacao nibs or mini chocolate chips

    1. Add almonds to a high speed food processor and pulse into tiny pieces. Add all other ingredients and blend until smooth. Add water by the tablespoon as needed until a doughy texture is formed
    2. Transfer batter to a lined loaf pan and press firmly into an even layer
    3. Place in fridge for 1 hour to set and slice into bars!

    Note: Use soft, pitted medjool dates for this recipe - if dates are not soft, soak them in hot water for 5-10mins, drain & pat dry, and continue on with recipe.

    Substitutions

    • Vanilla protein - I use plant-based protein powder, but you can substitute egg white protein powder or whey protein for non-vegan diets
    • Cacao powder -you can also use cocoa powder if preferred
    • Raw almonds - any whole nuts can be used for this recipe. My recommended substitutes are peanuts or walnuts.

    How To Store These Homemade RX Bars

    Store these homemade RX bars in an airtight container in the fridge for up to one week. For a great way to extend their shelf life, freeze them by individually wrapping each bar and storing in an airtight container. They’ll last up to 3 months frozen. Simply thaw at room temperature when ready to enjoy. It’s a great way to have a healthy snack ready with little time.

    3 Top Tips For Success

    1. Use soft, gooey Medjool dates for the best texture; dry, small dates won’t blend as well and will cause the mixture to be too crumbly
    2. Be sure to freeze or refrigerate until your bars have set before slicing. This is the perfect way to ensure they hold their shape.
    3. Add water 1 tablespoon at a time, pulsing between each addition. This convenient way prevents your bars from making any sticky mess and helps achieve the desired consistency.

    Can I customize the flavour?

    These bars are so easy to customize with your favourite flavours and mix in's. You can substitute almonds for your favourite nuts, such as pecans, walnuts or peanuts. You can also add dried fruits such as dried blueberries to make your own blueberry RX bars.

      Like RX Bars but looooove these so much more! So delicious and easy to make, even for someone like me who messes this stuff up. My kids (toddlers) even enjoyed this snack which is huge bc they are super picky! Will definitely be making these again!!!

      Would it be possible to use figs instead of dates in this recipe? I love rx bars but I generally have figs on hand instead of dates.

        Hi Anna! I haven't tested the recipe with figs myself, but if they are soft/gooey the bars should turn out quite similar 🙂 Hope this helps!
