Baked oats have been my new favourite breakfast lately and truly hit the spot every time! They taste like you're having a delicious, fluffy cake for breakfast, yet are filled with nutritious ingredients to fuel your day. My favourite part about baked oats is that they're so easy to customize to any flavour. You can throw in your fave mix-in's, add in protein powder, or boost them with superfoods. I've been experimenting with so many different combos lately and these chocolate chip cookie baked oats are definitely a winner! They're loaded with moist, cookie dough batter and topped with gooey chocolate chips!
How to make Chocolate Chip Cookie Baked Oats
These healthy baked oats take just minutes to prep and all you need is a high speed blender!
- Add all your ingredients except chocolate chips to your high speed blender (or food processor) and blend until completely smooth. Then stir in chocolate chips by hand.
- Pour batter into a lightly greased ramekin and top with extra chocolate chips
- Bake at 375F for 23-25 mins, until your oats are fluffy and lightly golden
- Top with a splash of almond milk if desired and enjoy!

Chocolate Chip Cookie Baked Oats
Ingredients
- ½ c rolled oats
- ½ teaspoon baking powder
- ½ c almond milk
- 3 tablespoon applesauce
- 1 tablespoon cashew butter
- 1 tablespoon chocolate chips
- 2 mini cookies, crumbled (optional)
Instructions
- Preheat oven to 375F and lightly grease a small baking dish or ramekin.
- Blend together all ingredients except chocolate chips and cookies in a high speed blender until smooth.
- Stir in chocolate chips and crumbled cookies by hand.
- Pour batter into baking dish and top with extra chocolate chips.
- Bake for 23-25mins until lightly golden.
- Top with a splash of almond milk and enjoy!
