These homemade rice krispie treats bring back so many childhood memories! Rice Krispie treats were my go-to lunch box snack growing up and I honestly couldn't have enough of them when I was a kid. So of course, I had to try my hand at a healthier, homemade version and boy am I happy I did! These healthy chocolate rice krispie treats are no-bake, vegan & gluten free and takes just minutes to whip up! Trust me, you wont even miss the marshmallows or added sugars in this recipe!
Ingredients in These Healthy Chocolate Rice Krispie Treats:
Medjool Dates - soft, sticky medjool dates are the key to this recipe! They provide a natural sweetness and help all the ingredients stick together.
Peanut Butter - I always try to use natural peanut butter's with no added oils or sugars. Creamy, drippy peanut butter is best for this recipe. Feel free to substitute creamy almond butter or hazelnut butter if you prefer.
Brown Rice Crisps - I used One Degree Organics brown rice cacao crisps.
Hazelnuts - the added nuts provide a lovely added crunch to these rice krispie treats. Be sure to use raw, unsalted hazelnuts.
Maple Syrup - I used 100% pure maple syrup for an added natural sweetness.

Healthy Chocolate Rice Krispie Treats
Ingredients
- ½ c pitted medjool dates
- ⅓ c peanut butter
- ¼ c hazelnuts
- 2 tablespoon maple syrup
- 2 c brown rice cacao crisps
- ~1-2 tablespoon water
Instructions
- Soak dates in hot water for 10-15 minutes to soften.
- Blend all ingredients except brown rice crisps in a high speed food processor. Add 1-2tbsp water as needed to blend, mixture should be sticky.
- Transfer to a bowl and stir in brown rice crisps by hand, one cup at a time.
- Press firmly into a 9x5 loaf pan lined with parchment paper.
- Place in the fridge to set (~1hr). Then slice into squares and enjoy! Store leftovers in an airtight container in the fridge.
