- oat flour
- pumpkin puree

White Chocolate Glaze:
- vegan white chocolate chips
- coconut oil
- chopped pecans

Instructions
- Preheat oven to 425F and line a baking sheet with parchment paper
- In a large bowl, combine all dry ingredients
- Cut in coconut oil with a pastry cutter (or fork if you don’t have one)
- Add in wet ingredients and stir until just combined (don’t overmix!)
- Form into a ball of dough and shape into a large round disk shape. Use a sharp knife to cut into 8 even triangle pieces and place each 2 inches apart on baking sheet.
- Bake for 16-18 minutes until lightly golden. Once baked, let cool on pan for 15 minutes before removing. (don’t skip this step!)
- For glaze, melt together white chocolate with coconut oil until smooth. Drizzle generously over top of cooled scones and top with chopped pecans while the glaze is still wet. Enjoy!
Substitutions
- Oat flour – you can substitute with gluten-free flour. You can also make your own oat flour by grinding oats in a blender or high speed food processor!
- Coconut sugar – Replace with light brown sugar if desired
- Nut milk – Use almond milk or any other dairy-free milk you prefer. If not vegan, you can also substitute dairy milk.
- Coconut oil – swap with cold butter in a 1:1 ratio. Use dairy-free butter for a dairy free version.
- Coconut yogurt (thick) – substitute with Greek yogurt or any thick vegan yogurt. Do not substitute with non-fat yogurt as the dough will not hold together.
- Pumpkin pie spice – Use a mix of cinnamon, nutmeg, and ginger if you don't have this on hand. The combination of these spices together will create a similar pumpkin spice flavor.
White Chocolate Glaze:
- Vegan white chocolate chips – Swap with regular white chocolate chips or another dairy-free option.
- Coconut oil – Use heavy cream for a thicker glaze.
