This single serve pumpkin cookie is one of my favourite cookie recipes for the autumn and takes pumpkin season to a whole new level. It's made with real pumpkin purée and is loaded with the best pumpkin flavor. The pumpkin cookie dough has the perfect soft texture, and paired with chocolate chips, it's truly a dream combo. This easy recipe can be enjoyed by kids, adults or the whole family this fall season!

Ingredients
- quick oats
- protein powder
- baking powder
- olive oil
- canned pumpkin puree
- pure maple syrup
- sea salt
- chocolate chips
- pumpkin spice (optional)

Instructions
- Combine all dry ingredients except chocolate chips. Then stir in wet ingredients.
- Form into a cookie shape and top with extra chocolate chips
- Place cookie on parchment paper and air fry at 350F for 8-10 minutes until golden brown
- Let cool to firm up and enjoy!
Substitutions
- Quick oats - you can substitute with rolled oats but it will slightly change the texture and baking time
- Olive Oil - melted coconut oil or avocado oil would also work for this recipe. You could also use melted vegan butter if preferred.
- Chocolate Chips - I use unsweetened, vegan chocolate chips but you can use any you prefer
- Protein powder - feel free to use unflavoured or vanilla protein powder. If you don’t like protein powder, you can substitute it with oat flour.

How To Store Air Fryer Pumpkin Cookie
Store leftovers in an airtight container in the fridge. To reheat, simply air fry at 350F until heated through.
3 Top Tips For Success
- For best results, let cookie cool on a cooling rack or wire rack for 5-10 minutes before enjoying. Your single serve cookie will firm up slightly as it cools
- Check cookie at the 8 minute mark. The cookie goes from golden to burnt vary quickly, so be sure to check your cookie while baking as baking time can vary slightly depending on your air fryer.
- Press down chocolate chips on top of cookie slightly before baking. This ensures that then remain on your cookie and don’t fall off during the baking process.
